A horse can't run every day for a number of reasons:
a) there are not races everyday that your stable can enter
b) a horse needs time to recover
c) that'd just be mean and greedy to even try that.

Maybe grab a mentor and read the help section? Can be very useful as horses are penalised the more injured they are raced at.
Right now your horses will be very penalised so I wouldn't expect a good showing from them at all.

And keep in mind that your horse's physical/medical condition weighs heavily on how well they race. A fully fit horse has the ability to perform to its maximum potential. An incapacitated one just wants to lay down in the gate.
